Minestrone soup

Ingredients
2 cups chicken broth2 cups beef broth1 can kidney beans1 can crushed tomatoes2 carrots1 large potatoonion1 cup frozen peas1 pkg frozen spinach1 tsp garlic1 tbsp parsely1 tsp oregano1/2 tsp margaram1/2 tsp basil
Directions
Slice carrots, 1 slice of onion and dice potato.
Throw in crockpot, along with broth, kidney beans and tomoto. Add seasonings. Heat on low for 8 hours, near the end add thawed and drained spinach and frozen peas.

    I'm going to swap out the broth for Trader Joe's low sodium vegetable broth. That should bring the sodium down to tolerable levels. That and using non-canned kidney beans. - 5/31/09
