Mini Meatloafs

Ingredients
2 lbs lean ground beef1 onion, choppedi green pepper, chopped3 Tbs ketchup
Directions
Mix all ingredients together in large bowl. Divide mixture evenly into muffin tins. Bake at 350 for 45 minutes. These freeze great, and reheat well.

    sounds a little bland to me- I usually mix in egg, tomato soup, bread crumbs, garlic, onion powder, etc., but I do like the idea of mini meatloaves. I'll have to break out the muffin pan next time I make it! - 6/8/09

    I made with turkey breast meat and it got too dry. I think next time I will add an egg and maybe some bread crumbs. I also made a sauce to go on top-that helped the dryness. - 6/10/09
