Italian Turkey Meatloaf (Crockpot or Oven)

Ingredients
21 oz Lean Ground Turkey1 Small Onion, finely chopped1 medium red pepper, finely chopped1/4 cup Egg Substitute (equals one egg)2 cloves garlic, chopped3/4 cup tomato sauce, divided (1/2 cup & 1/4 cup each)1/2 cup seasoned bread crumbs1/3 cup PLUS 2 TBS grated Parmesan cheese2 tsp Italian seasoning, divided (1 tsp each)1/2 tsp garlic salt1/4 tsp black pepper
Directions
1: in large bowl, combine (hands work best) turkey, onion, red (or green) pepper, egg, garlic, 1/2 cup tomato sauce, bread crumbs, 1/3 cup parmesan cheese, 1 tsp Italian seasoning, garlic salt and black pepper.

2: If cooking in slow cooker, line with enough aluminum foil as to make it overhang sides, as to creat handles.

3: If cooking in oven - use non-stick bread pan. May want to spray a little non-stick spray on bottom and sides.

4: Form turkey mixture in loaf and place in slow-cooker or bread pan. In slow-cooker, cook on high for 2 1/2 hours or Low for 4 1/2. If baking, bake at 350 for 1 1/2 hrs.

5: About 30 minutes before cooking is complete, place remaining 1/4 cup tomato sauce in small bowl and stir in remaining 2 tbs parmesan cheese and 1 tsp Italian seasoning. (I usually add a little water to this to make a little thinner & make more juicy). Pour mixture over meatloaf & continue cooking for remaining 30 minutes.

6: Carefully use aluminum foil handles to lift out of crock-pot and transfer to serving plate. If baked in oven - use 2 spatulas to transfer from pan to plate. Cut & serve - enjoy!

    I MADE THIS YESTERDAY AND IT WAS VERY GOOD. OF COURSE, I DIDN'T HAVE TOMATOE SAUCE, SO I USED ROTEL TOMATOES WITH CHILIES. I DIDN'T SPLIT ANYTHING FOR LATER, JUST USED IT ALL AT ONE TIME. MY HUSBAND IS NOT SURE ABOUT TURKEY BURGER YET, BUT HE TOOK IT FOR LUNCH TODAY. - 10/4/09

    I'm actually making it again tonight!
    I don't know exact size of the servings - 1" sounds about right.
    I simply just cut it up into 8 equal size slices, which is pretty easy to do if your cooking in an oval crockpot or bread pan. Just make sure you make the loaf pretty uniform & not tapered at end
