1/4 cup olive oil2-3 cloves garlic, chopped fine1 small green pepper, chopped1-2 serrano pepper, chopped1 yellow onion, chopped1 carrot, chopped1-2 stalks celery, chopped1/4 cups of seven different dried beans, soaked in cold water to cover for 12 hours, then drained6 cups chicken stock1 (14 oz.) can chopped tomatoes3 tbsp. tomato paste1 tbsp. sugar1 tbsp. dried basil1 tbsp. dried oregano1 tbsp. red wine vinegar1 tsp. dried thyme3 bay leavessalt and pepper1/2 c. chopped fresh parsley
Warm the oil over medium heat. Add the bell and serrano peppers, onion, carrot, cellery and garlic. Cook 3-5 minutes. Add the beans, stock, tomatoes, tomato paste, sugar, spices and vinegar. Bring to a boil, and reduce heat and simmmer for 2 1/2 - 3 hours. Add salt and pepper to taste. Discard bay leaves. Stir in parsley and serve.
