Carrot Muffins

Ingredients
Sub Cranberries for raisins in calculations.3 cups carrots, grated 4 egg whites1 1/4 cups applesauce2 cups white sugar 2 cups wheat flour2 teaspoons baking powder 2 teaspoons baking soda 1 teaspoon cinnamon, ground 1 teaspoon salt 1 cup golden raisin Raw sugar (optional)
Directions
Beat together the egg whites, applesauce, and white sugar. Blend mixture for thirty seconds.
Sift together flour, baking powder, baking soda, salt and spices.
Add the carrots and raisins. Pour egg mixture into dry ingredients, and mix well.
Pour batter into prepared cupcake papers.
Bake at 350 degrees F oven for 18-22 minutes. Sprinkle raw sugar on top of the muffins at about 15 minutes, if desired.
