Quick Nicoise-Inspired Salad

10 green beans, raw, trimmed2 Tbsp. apple cider vinegar1 Tbsp. extra virgin olive oil1 clove garlic, minced1/2 tsp. dry mustard1 C. shredded red-leaf lettuce1 tomato, cut into wedges1 green onion (scallion), chopped1/2 can (2.5 oz.) tuna in water1 tsp. brine-cured capershandful chive flowers, coarsely chopped
Prepare an ice-water bath in a large salad bowl.
Bring a pot of water to the boil. Add a bit of salt; add green beans and simmer until tender and bright green, about 5-6 minutes. Remove beans from the water and plunge into the ice water to stop their cooking. After about 30 seconds, dump the beans into a colander to drain.
Mix the vinegar, garlic, and dry mustard in the salad bowl. Drizzle the olive oil into this mixture while whisking vigorously. Take the drained green beans and toss them in this dressing; let them rest there while you prepare the rest of the salad. Add the green onion, tomato, and lettuce, and toss to coat. Remove salad to a smaller bowl and top with the capers, tuna, and chive flowers. Drizzle any dressing remaining in the large bowl over the tuna and serve.
