Egg and Sausage Souffle

Ingredients
1 LB reduced-fat pork sausage or turkey sausage3 cups Egg Beaters1 cup canned mushrooms1 cup fat-free half and half3 cups cheese
Directions
Butter 13x9 in baking dish. Brown sausage and drain. Layer half of the cheese, the sausage, the egg substitute, and the mushrooms. Top with remaining cheese. Cover and refrigerate overnight.

In the morning, set the oven to 350 degrees. Bake uncovered approximately 30 to 40 minutes or until bubbly and brown. Makes 8 servings.
