Wild Rice Side Dish

Ingredients
5 cups cooked wild rice (cooked in low sodium chicken broth, or homemade broth if you have it)1 tablespoon kosher salt1 cup toasted pine nuts1 cup craisins10 tablespoons extra virgin olive oil5 tablespoons seasoned rice vinegar (available in the vinegar section of most grocery stores)
Directions
Makes 12 - 1/2 cup servings. Refrigerate any leftovers.

Combine all ingredients in a large bowl. Stir gently so as not to mash the rice. Serve warm, room temperature or cold.
