Carrot Cake with Stevia

Ingredients
2 cups whole wheat flour1/2 cup spelt flour3 tsp baking powder1 tsp Stevia powdered extract2 tbsp sucanat (raw cane sugar)1/4 cup chopped walnuts1 egg2 egg whites2 tbsp olive oil2 tbsp unsweetened applesauce1 1/2 cups grated carrots1/2 cup grated zucchini1/2 cup half & half1 cup plain, fat free, yogurt3/4 cup raisins (unpacked)1 tbsp ground cinnamon1/8 tsp ground nutmeg1/8 tsp ground ginger1/8 tsp ground cloves
Directions
Cream all moist ingredients together, except the eggs. Add stevia and mix well. Add eggs. Mix well. Add remaining ingredients. Mix well. Place in a greased pan and bake at 350 for 35-40 minutes.
