Ingredients
Ingredients: * 2 bell peppers * .5 pound lean ground beef * 1 small white onion, diced fine * Oregano, Seasoned Pepper and Fennel Seed [optional] to taste * 1 tomato * 2 teaspoons of crushed garlic or 1/2 teaspoon garlic powder * 2 ounces of fresh Feta cheese, crumbled * 2 tbsp grated parmesan or romano cheese * 1/2 cup shredded mozzarella cheese (optional)
Directions
Spray casserole dish with PAM. Cook ground beef at low to medium heat, stirring
often. Once meat is cooked through, drain thoroughly. Add all onions, garlic, oregano,
seasoned pepper, fennel seed and tomatoes. Simmer over low heat approximately 20 minutes.

Preheat oven to 350°F.

Cut off tops of all peppers, remove inner seeds and membranes and wash thoroughly. Fill all
peppers with meat mixture, alternating with a layer of feta and parmesan cheeses. Place peppers into a casserole dish, side by side. Alternatively, you can cut peppers in half
vertically and stuff each half, making serving easier and speeding bake-time.]

Add any remaining mixture around the peppers and sprinkle all remaining feta and parmesan cheeses on top. Add shredded mozzarella cheese if desired for a hint of extra flavor.

Bake at 350°F for approximately 30 minutes or until browned and bubbly as desired.

Makes 2 stuffed peppers (or 4 half-peppers.)

    Very good, definitely add the shredded mozz on top, and if you like a little saucy, then add a little tomato sauce or ketchup to the mixture as well. - 9/16/12

    Tasty! Made it Dukan friendly by substituting fat free cheeses. I doubled the recipe and added canned fire roasted crushed tomatoes. Instead of stuffing the peppers I cut them into bite sized pieces and layered them with the rest of the ingredients into the casserole. - 3/16/13

    this is sooooo good. i used turkey meat instead of hamburger meat. i also grated my onion and my tomato and poored it in with the turkey meat along with the spices and added a little creole. let it simmer then stuffed the peppers. it was awesome and my kids even loved it. don't take long to fix..... - 9/2/10
