Low Calorie Apple Muffins

Ingredients
1 cup flour1 tbsp baking podwer11/2 tsp baking soda1/8 tsp salt1 cup chopped green apple1/4 cup sugar1 large egg1 tablespoon vanilla extract1/4 cup applesauce1 tea coconut extract1/2 cup coconut
Directions
Preheat over to 360 degrees. Line muffins pan with liners. In medium bowl, combine flour, baking power and soda, coconut and salt together. In separate bowl, combine apple, sugar, egg, vanilla and coconut extract, blend until well mixed, add applesauce and apple. Slowly combine dry mixture to apple mixture. Blend well. Scoop batter into muffin cups. Bake 15-20 minutes or until a toothpick inserted in center of muffin comes out clean. Makes 12 serving.
