Mediterranean Style Quinoa

1 cup Quinoa2 cups water1 tsp. olive oil1/2 cup zucchini chopped1/4 cup red onion chopped1/2 cup green or red pepper chopped1/2 cup cherry tomatoes halved3 tbsp parsley1/2 cucumber chopped1/4 cup lemon juice2 tbsp balsamic vinegar1 oz. feta cheese crumbles
Rinse quinoa thoroughly in a small strainer or by running fresh water over the quinoa in a pot. Drain. Put quinoa and water in 1 1/2 qt. saucepan; bring to boil. Reduce heat to simmer; cover and cook until all water is absorbed (10-15 minutes). When done, the grain appears translucent and the germ ring will be visible.
Meanwhile, heat 1 tsp olive oil in a non-stick pan over medium heat. Add zucchini, red onion, bell pepper, season with salt & pepper & cook until veggies begin to soften. Add cherry tomatoes & 2 tbsp parsely, cook 2 minutes. Transfer to a bowl, let cool a few minutes, then add 1 tbsp parsely, lemon juice, balsamic, toss. Sprinkle feta over the top, toss lightly & serve. Serves 4.
