Vegetarian Black Bean Burritos

8 Multi-Grain Tortillas4 oz Shredded Cheddar Cheese1 sliced medium onion2 Tbs of Canola oil2 baby zucchini's sliced or dicedgarlic powder (to taste)1 can sweet yellow corn (drained)1 can Trader Joes Cuban style Black Beanschili powder (to taste)Tapatio salsa (optional)light sour cream (optional)
Heat oil in large frying pan. Saute onions about 5 minutes. Add chopped zucchini. Season with garlic powder. Saute until soft. Add drained corn and black beans. Season with chili powder. When mixture is warm and bubbly set aside. Slightly warm tortilla shells (on a griddle or in the microwave) Set tortilla shell on plate and put about 2 big spoons of filling on shell. Add shredded cheddar cheese. Fold filling into tortilla shell and place on griddle to toast each side.
Continue with all 8 burritos. Serve with salsa and light sour cream if desired.
