Alfredo Sauce

Ingredients
*Margarine, soft, 3 TBSP*Flour, white, 3 TBSPMilk, nonfat, 2 cup Salt, .25 tsp Pepper, black, .25 tspNutmeg, ground, .25 tsp Parmesan cheese, light (PC Blue Menu), 4 tbsp
Directions
Melt margarine in a small saucepan on medium heat. Add onion. Saute for 5 minutes until soft.

Stir in flour until well mixed. Cook and stir for 1 to 2 minutes until bubbling and grainy but not browned. It will be very thick and that’s ok.

Gradually whisk ¼ c. milk until combined. Whisk in remaining milk, salt and pepper.

Simmer, uncovered, on low for about 10 minutes, stirring occasionally, until sauce is thickened. Stir in nutmeg.
