Julia's Creamed Peas

Ingredients
1 tblsp Olive Oil1-2 tblsp flour1 cup milk1 cup water1 bag of frozen peas1 tsp vinegar (optional)1 tsp sugar (optional)
Directions
makes about 8 1/2 cup servings.

Toast a thick roux out of the olive oil and flour. Slowly and in batches add 1 cup of milk, mixing the roux fervently to keep from making lumps. Once thin enough, add all of milk and water. Then add the frozen peas and cook for about 15-20 minutes, until peas are soft.
Once peas are soft, you can add vinegar & sugar, if you like.
