8 ounces rotini pasta, or other shaped pasta (not noodles) – cooked and cooled20 fresh peapods1 small cucumber, diced2 medium carrots, julienne sliced1 medium yellow, red or green pepper (I usually double this recipe and use 2 different colored peppers)¾ cup sliced radishes (optional)½ cup sliced green onions3 Tbls. snipped fresh cilantro1/3 cup chopped peanuts (sprinkle on top, just before serving)Dressing¼ cup salad oil3 Tbls. rice vinegar2 Tbls. sugar2 Tbls. soy sauce1 tsp. grated ginger root (may add more to taste)1 tsp. chili oil (may substitute Tabasco sauce to taste)
Mix the pasta and vegetables. Add the dressing and marinate for a couple of hours or overnight. Sprinkle the nuts on top just before serving.
