Glazed Baby Carrots

Ingredients
20 baby carrots1 tbsp butter2 tbsp packed brown sugar1/8 tsp salt1/8 tsp pepper1/2 tsp dried parsley OR 1/8 cup fresh parsley
Directions
Steam carrots. Melt butter over medium heat, add sugar, stirring until melted. Remove from heat. Add salt, pepper, and parsley. Coat carrots in glaze and serve.

    I took out the salt because sodium is my daily downfall. Pretty good, especially with the salmon I had with it. Might adapt this to be a salmon glaze. :) - 6/18/08
