Pork Loin with garlic and ginger

Pork Loin about 2 - 4 poundssalt and peppergarlic powder1 large onion, sliced1/2 of sugar or splenda1 1/2 cups of hot water4 tablespoons lite soy sauce4 tablespoons sherry1 teaspoon ground ginger6 tablespoons red wine vinegar2 tablespoons of ketchup1 can pineapple chunks, drained
season pork loin with salt, pepper and garlic. Brown roast on all sides or place under broiler for 15 to 20 minutes to remove some fat. Place onion in bottom of slow cooker, top with the pork. Combine sugar, hot water, soy sauce, sherry, ground ginger, wine vinegar and ketchup. Pour over the roast. Cover and cook on low for 9 to 11 hours Or cook on high for 4 hours. About 1 hour before donw, add the pineapple chunks and any other vegetables you want.
To thicken gravy, blend 2 tablesoons cornstarch with tablespoons cold water. Set the slow cooker on High; add constarch mixture. continue to cook until thickened.
