Wholesome Couscous Salad

Ingredients
80g/3oz couscous0.25 vegetable stock cube100g/3.5oz broccoli florets0.5 small red onion0.5 small carrot, grated15g/0.5oz sultanas1 heaped teaspoon sunflower seedsA squeeze of lemon juice2 tablespoons chopped, fresh parsley
Directions
Makes 2 servings.

1, Place the couscous in a bowl and add 150ml (5 fl. oz) boiling hot stock made with the crumbled stock cube. Cover and leave for 5 - 10 minutes.

2, Meanwhile, lightly steam or boil the broccoli until just tender, then cut into bite sized pieces.

3, Add the broccoli into the couscous, along with the red onion, carrot, sultanas, sunflower seeds, lemon juice and parsley. Season to taste and serve.
