Ingredients
-1 Ezekiel English muffin half (or other whole-grain English muffin), toasted-2 egg whites or 1/4 cup egg substitute-1/4 cup salsa-1/3 tsp olive oil-1 slice Canadian bacon
Directions
Cook the Canadian bacon according to package directions and set aside. Scramble the egg whites in the olive oil. Top the English muffin half with the Canadian bacon, then egg whites, then salsa. Makes 1 serving. For a 3-block breakfast, eat with an additional 1 block of fruit.
