Avocado Salad

Ingredients
1 Avocado1 hard boiled egg1 Roma TomatoChopped onion (about 1/4 onion)1 - 2 oz of White CheeseOlive Oil 1 tsp
Directions
Peel and pit avocado and egg.

Fine chop avocado, egg, tomato and onion.
Mix ingredients, including cheese.
Drizzle lightly with olive oil
Salt and Pepper to taste
May also drizzle with lemon juice if interested.

Makes 1 serving as a replacement for a light dinner, or two servings for a lower-calorie "lettuce-less salad"
