Tomato, Pea and Potato Curry

1.5 Tablespoons I Can't Believe its Not Butter Mediterranean Blend6 small potatoes1 ripe tomato1 15 oz can Diced Tomatoes with Green Chilies1 15 oz can sweet peas1 tablespoon curry powder1 teaspoon cumin1 dash salt2 tablespoons chopped fresh cilantro
Chop potatoes into bite-sized chunks.
Heat I Can't Believe it's Not Butter in a large skillet until hot. Add potatoes and heat for five minutes.
Add chopped tomato, can of tomatoes, can of peas, tablespoon of curry powder (or more to taste!) teaspoon of cumin, and salt. Simmer on medium heat for 25 minutes. At the very end, add chopped cilantro. Makes 4 servings -- great with rice or couscous!
