Cacao Pudding

Ingredients
5 ripe avocados3/4 cup raw cacao powder1 teaspoon vanilla extract1 teaspoon cider vinegar1 pinch sea or kosher salt1/4 cup water1 cup raw agave nectar
Directions
Scoop avocado flesh into food processor, omitting the pits. Process and pulverize until smooth; add in cacao powder, vanilla, water, and salt. Blend to creamy consistency. Add sweetener as desired, 1 cup is usually about right for my tastes. If taste of avocados comes through too strongly try adding a little ground cinnamon and/or banana extract. Chill and serve.

    I made a mini version with
    1/4 c. almond butter
    1/4 c. agave
    1/8 c. water or more
    1/8 c. cocoa powder
    small pinch sea salt
    1 medium avocado
    1 T. coconut oil
    1 tsp. vanilla
    And threw all ingredients into a food processor and processed until smooth.
