Zone Oatmeal Blueberry Muffins

Ingredients
Egg, fresh, 4 largeMilk, nonfat, 2 cupVanilla Extract, 2 tspApplesauce, unsweetened, 1.5 cupBlueberries, frozen (unsweetened), 2 cup, Steel Cut Oats, dry, 2.5 cupeas whey protein powder, 160 gram(s)Salt, 1 tspFlaxseed, 1 cupBaking Soda, 1 tspBaking Powder, 3 tspCinnamon, ground, 2 tbspWalnuts, .25 cup, choppedIn a bowl add 2 cups of milk to the steel cut oats and let sit until oats are swollen. Mix all the dry ingredients together in a bowl.In another bowl mix all the wet ingredients, minus the milk, fully.Combine wet and dry ingredients mixing well. Spray muffin pans with Pam and fill. Makes 24 muffins.
Directions
Bake in 350 oven for 25-30 min until done, test center with toothpick.

    This is not a sweet muffin. It is a great mini breakfast or snack, with a lot of texture because of the steel cut oats and a great alternative to a processed Zone snack bar. - 7/2/12
