Cumin Scented Spuash

Ingredients
2 yellow squash or zucchini, halved lengthwise1 tablespoon olive oil1/4 teaspoon ground cumin1/4 teaspoon salt1/8 teaspoon red pepper (optional)
Directions
1. Preheat oven to 450.

2. Place squash halves, cut side up, on a baking sheet, drizzle with oil. Bake at 450 for 20 minutes.

3.Cook cumin in a small nonstick skillet over medium heat, stirring and shaking often, 3 to 4 minutes or until fragrant. Combine cumin, salt, and red pepper in a small bowl. Sprinkle over squash.
Yield: 4 servings.
