Chickpea and Potato Curry

Ingredients
1 can chickpeas, drained1 can diced tomatoes2 TB earth balance butter substitute4 TB curry powder1 c. onion, sliced thin2 small baked potatoes, cubed2 cups fresh spinach
Directions
Melt earth balance spread in saucepan. Saute onions until soft. Add curry powder and cook for 5 minutes. Add canned tomatoes, drained chickpeas, and diced potatoes and simmer for 20 minutes. Add spinach and heat until spinach is wilted. Serve over cooked brown rice.
