Ingredients
1lb lean ground turkey browned1 cup brown rice1 cup black beans1 cup sweet kernal corn1 red pepper cut up1 jar salsa verde1 large can enchilada sauce9 flour tortilla1 cup cheddar cheese shredded1 cup monterey jack cheese shreddedCuminchili powderPaprika
Directions
Brown ground turkey and cook brown rice according to package directions. Add beans, pepper, and corn. In a casserole pan layer 1/2 jar of salsa verde, flour tortillas, rice/veggie/turkey mixture enchilada sauce and cheese. repeat layers until all out of ingredients. serves 9 portions
Optional you can add a dollop of lite sour cream on the side for added flavor
