low fat pasta salad

Ingredients
1 lb cooked pasta1 C halved cherry tomatoes1 1/2 C chopped spinach7 tablespoons of homemade vinaigrette(equal amounts of red wine vinegar and light olive oil, 1 small shallot, 1 tbsp spicy brown mustard or dijon, 1 tbsp oregano, 1 tsp salt, 1 tsp pepper)
Directions
Cook and drain package of pasta, run cold water over pasta to stop the cooking process, toss with tomatoes, spinach, and vinaigrette. Refrigerate. Makes 4 2-cup servings.
