Rice Noodles, 115 grams soaked in hot water until soft, drain.prawns, cooked, 16 Peppers, sweet, red, raw, sliced, 0.5 cup Cucumber (with peel), 0.5 cucumber cut into stripsRed Ripe Tomatoes, 1 medium sliced2 Shallots, finely chopped Coriander, fresh, 1 handful, choppedDressing;Rice Vinegar, 1 tbsp Fish Sauce, 2 tbsp Lime Juice, from 1 lime pinch saltGinger Root, 0.5 tsp gratedLemon grass (citronella), fresh, 1 tbsp finely chopped1 red chilli Pepper, deseeded and finely chopped2 tbsp chopped fresh minttarragon finely chopped, 2 tbsp1 tbsp snipped chives
Make dressing by combining all ingredients and whisking well.
Drain noodles, plunge them into pan of boiling water for 1 min, drain, rinse under cold running water and drain well again.
In large bowl combine the noodles, prawns, red pepper, tomato, cucumber and shallots. Season to taste. Toss in the dressing and garnish with coriander.
