Crock Pot Chili Verde

40 oz (2.5 lbs) trimmed pork shoulder2 28 oz cans green enchilada sauce4 oz can hot green chiles1 small yellow onion1 tsp cumin (or perhaps 2 tsp to taste)
Cut the pork into cubes, trimming as much fat as you can, although I do recommend leaving some for flavor (it will become liquid and float to the top for later discarding). Combine with enchilada sauce, green chiles, and cumin in crock pot. Cook for 4 hours on high, 6-8 hours on low. Slice and add the onion about an hour before serving, or serve fresh on the side, diced.
