2 medium potatoes1 leek 1 c. ish Whole Milk .75 tbsp Extra Virgin Olive Oil
Directions
-dice potatoes and chop leeks
-sautee potatoes and leeks for a minute or so in the olive oil, in a medium-sized saucepan
-add milk
-stir occasionally, adding salt and pepper to taste
-soup is done when potatoes are cooked through
