Ingredients
4 baking potatoes, scrubbed and baked1 large can tuna packed in water2 stalks of celery1/2 cup diced onion1/4 cup reduced fat or fat free cheddar cheese1 cup reduced fat or fat free mayonnaise1 egg white beaten
Directions
Bake the potatoes until soft. Cut open and scoop out insides into a large mixing bowl. Do not discard the skins. Mix the celery, onions, tuna and mayonnaise(save 2 tbsp for topping) together with the potatoes. Place the mixture back into the potato skins. Beat the egg white until frothy, beat in the saved mayonnaise and pour over tops of potatoes. Sprinkle cheese on top and bake for approx. 30 minutes or until completely heated.
