Classic Macaroni Salad

Ingredients
4 cups uncooked elbow macaroni1 cup light mayo1/4 cup white vinegarsugar substitute equivalent to 2/3 cup sugar2 1/2 T yellow mustard1 t salt1/2 t black pepper1 large onion, chopped2 stalks celery, chopped1 green bell pepper, seeded and chopped1/4 c grated carrot (optional)2 T chopped pimentos (optional)
Directions
Cook macaroni in boiling water until tender, about eight minutes. Rinse in cold water and drain.
In large bowl, mix together mayo, vinegar, sugar substitute, mustard, salt and pepper. Stir in the onion, celery, green pepper, carrots, pimentos, and macaroni. Refrigerate at least four hours before serving, but preferably overnight. Serves 10.
