Stuffed Zucchini

3 small zucchini 3 lg. eggs2 cups cottage cheese 2%2 cup chedder cheese shreaded 2%1 cup mozzarella cheese shreadedsalt, pepper to taste.1 cup pepperoni4 oz. bulk sausage1 cup chopped mushrooms~fresh1 tbs. olive oil.50 cup chopped onionparm cheese to top
cut zucchini in half, and spoon out pulp. Discard pulp.
Cover zucchini with water and cook until slightly soft. Do not let it get too soft.
In mixing bowl add eggs, cheeses, and pepperoni and mix. add spices to taste.
set aside.
cook and chop sausage until done. Drain grease.
add olive oil in skillet and saute mushrooms and onions until soft.
Mix, sausage, onions and mushrooms in mixture.
Top each half with parm cheese.
Fill zucchini halves with the mixture and bake for 30 minutes or until filling is hot and zucchini is soft.
