Marinated Chicken and Rice

Ingredients
Marinade Ingredients:1/2 cup of Soy Sauce1 Tbsp. Garlic2 Tbsp. Lemon Juice1 Tbsp. Brandy (or wine)2 Tbsp. of Lemon Pepper Seasoning1 Chicken breastRice:1/4 cup onion1/4 bell peppers2 Tbsp. GarlicBrown Rice1 Tbsp. red pepper1 Tbsp. Chili powder
Directions
Mix ingredients for marinade in a bowl. Place chicken in bowl, poke small holes with a knife into the chicken, and allow to marinate for 30 minutes on each side. While chicken is marinating, begin making brown rice according to package instructions. Mix into the rice as it is cooking, add the bell peppers, garlic, red pepper, chili powder, and onions to the rice. While the rice is finishing, take the chicken out of the marinade and place it onto a grill or skillet. If cooking in a skillet, add a little water into the pan to keep from drying out. Allow chicken to cook thoroughly until there is no pink. Once the chicken and rice are finished cooking, place the rice and chicken on a dish and serve. Makes 2 servings.
