DETOX Broccoli and Arugula Soup

Ingredients
1 tbsp extra virgin olive oil1 clove of garlic, thinly sliced1/2 yellow onion, roughly diced1 head of broccoli, cut into small florets (about 2/3 lb.)2.5 cups of water1/4 tsp salt1/4 tsp black pepper3/4 cups of arugula1/2 lemon
Directions
1. Heat the olive oil in a medium, nonstick saucepan over medium heat.
2. Add the broccoli and cook for 4 minutes or until bright green. 3. Add the water, salt, and pepper, bring to a boil, lower the heat and cover.
4. Cook for 8 minutes or until the broccoli is just tender.
5. Pour the soup into the blender and puree with the arugula until quite smooth.

Be careful when blending hot liquids, start slowly and work in batches if necessary.

Makes 1 2-cup serving.
