Ingredients
Prep time: 10 minutesCooking time: 5-7 minutesYield:6 servings(1 serving equals 1 carb choice)10-ounce package frozen whole kernel corn1/2 cup chopped celery1 teaspoon powdered chicken bouillon1/3 cup water1/4 cup can sliced mushroom rained1 or 2 medium tomatoessalt and pepper to tastesplash of balsamic vinegar(optional)
Directions
1: in a sauce pan, combine the corn, celery, bouillon, and 1/3 cup water. Bring to a boil. Cover and simmer until vegetables are tender, about 5-7 minutes
2: Stir in the mushroom and diced tomatoes; heat through. Season to taste with salt and pepper. Add a splash of balsamic vinegar if desired
