Spinach and Chickpea Sandwiches

1 15-oz can chickpeas, drained1/4 c lemon juice2 T water1 T capers1 T balsamic vinegar1/2 t garlic, minced6 oz fresh spinach12 slices wheat bread (Arnold's Double Fiber)
Place the chickpeas, lemon juice, water, and capers in a food processor and process until smooth.
In a medium saucepan combine vinegar and garlic; cook one minute. Add the spinach and wilt, about one minutes.
Spread the chickpea mixture over each slice of bread. Place the spinach mixture on one slice of bread and add another slice to form a sandwich.
Serves six.
