Cauliflower and Cheese Soup

Ingredients: Butter, salted, 200 grams Onions, raw, 2 large Cauliflower, raw, 1 head, medium (5-6" dia) Plain white flour (UK), 100 g Chicken stock, home-prepared, 6 cup Parmesan Cheese, grated, 100 grams Thickened Cream, 300 gram(s) Salt, 1 tbsp Pepper, black, 1 tbsp
1. Melt butter, add onions and brown slightly
2. Add Cauliflower and cook for 10 minutes stirring occasionally
3. Stir in flour and add vegetable stock one cup at a time, stirring vigorously to remove any flour lumps.
4. Simmer for about 30 minutes until caulfower is soft and breaking up, add cheese and cream and season to taste.
5. mash or blend
6. Simmer and serve with Parmesan on top and crusty bread
