Cauliflower Smash

3 cups cauliflower (approx. 1 head)1/2 cup heavy whipping cream1/2 stick unsalted butterseasoning to taste (your choice)Gruyere Cheese 2 oz. (4 slices) (or cheese of your choice)1 tsp paprika
1. Trim hard stems and leaves from cauliflower. Cut flowerets from stem (discard stem) and place in rolling boil of salted water for 15 minutes until tender. DRAIN WELL
2.Place hot cauliflower in food processor with large blade. Pulse while adding butter and heavy cream. Add seasoning to taste. Spoon mash into 1-quart oven-proof casserole with 4 slices of cheese on top. Dash top of casserole with paprika. Place in warm (200 degrees) oven to keep until ready to serve.
