Vermonter Tofu Scramble

* Tofu, extra firm, 1 block (remove) * *Gimme Lean Sausage Style, 14 oz (remove) * Cheddar Cheese, 1 cup, diced (remove) * Maple Syrup, 3 tbsp (remove) * Apples, fresh, 2 medium (2-3/4" dia) (approx 3 per l (remove)
Press the tofu with paper towels and a heavy pan for at least 15 minutes on a side.
Heat a skillet and spray with PAM or other cooking spray. Brown the soysage, breaking it into little chunks with your spatula. Add in the tofu and the apples, and let cook down a little bit, breaking up the tofu with the spatula as well. Add the maple syrup (only the real stuff) and let some of the water steam off. Mix in the cheese last, just until it melts. Makes 4 large portions (or 6 smaller ones).
