Chicken Enchiladas

8 flour tortillas8 oz cooked boneless, skinless chicken breast, cubed1 1/2 cups 2% or light shredded cheddar or Mexican blend cheese1 can Old El Paso red enchilada saucecorn kernels from two ears of small corn (or equivalent)
1. Preheat oven to 375 and spray a 9X13 baking dish.
2. Stir 1 cup of cheese, chicken, corn and 3/4 cup enchilada sauce together.
3. Wrap tortillas in a paper towel and put in microwave on high for 1 minute.
4. Fill each tortilla with 1/8 of chicken mixture and place, seam side down, in the baking dish.
5. Pour the rest of the enchilada sauce over the enchiladas and sprinkle with the rest of the cheese.
6. Bake 15 - 20 minutes or until hot.
