Cranberry Orange Oatmeal Muffins

1-1/4 cups all-purpose unbleached flour1 cup quick-cooking oats1/2 cup packed brown sugar2 tsp baking powder1/2 tsp salt1/2 tsp cinnamon1/4 tsp baking soda1/4 tsp ground nutmeg1 egg, lightly beaten1 cup vanilla lowfat yougurt1 Tbsp orange zestJuice from 1/2 large navel orange1/4 cup canola oil/butter spread melted1 cup Oceanspray craisins1/2 chopped walnuts
Makes 18 small muffins
1. In a large bowl, combine the first eight ingredients. Combine the egg, yogurt, orange zest, orange juice, and melted butter spread; stir into dry ingredients just until moistened. Fold in craisins and nuts.
2. Coat muffin cups with cooking spray; fill three-fourths full with batter. Bake at 375 degrees for 18-20 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pan.
3. ENJOY!! YUM!!!!
