Hearty Sausage Bean Soup in the Slow Cooker

Ingredients
2 lbs. mayocoba beans, rinsed and soaked1 pkg (4 cup) Trader Joe's Low Sodium Chicken Broth4 c. water6 Hans' All Natural Chicken Sausage:Spinach, Fontina Cheese & Roasted Garlic2 tsp. black pepper1/4 pkg. frozen spinach (more if you like)2 Tbsp. olive oil1 Tbsp. dehydrated onion flakes
Directions
Place broth, water, and beans in slow cooker and turn to low. Slice sausage into thin slices. Sautee them in olive oil and onion flakes and add the lot to the beans. Add the spinach and turn it to high, stirring occasionally to keep it from sticking to the bottom.
Makes 22 FILLING 1-cup servings.
