830g canned salmon, drained, bones and skin removed and mashed ( you should have about 500g)2 spring onions, finely chopped1 tsp finely grated lemon zest1 Tbs chopped parsley1/2 tsp Worcestershire sauce1 tsp dijon mustard2 eggs1/2 cup Simply fibre (try plain psyillium or sm amount breadrumbs, or the lemon gremolata coating) (TVP better) 1 Tbs olive oil
Combine salmon, spring onion, lemon zest, parsley, Worcestershire sauce, mustard and eggs well.
Form into 12 patties
Stand in fridge for at least 1 hr.
Place the Simply Fibre into a bowl and dip each patty to coat on all sides.
Heat oil in non stick pan, and cook the patties until browned on both sides.
Serve with Watercress Cucumber Salad
