Pesto and Bow Tie Chicken (or shrimp)

12 oz. tri color Bowties, cooked and drained1/4 c. olive oil1/2 c. mayonnaise1 c. firmly packed fresh spinach leaves1/2c. grated parmesan cheese1/4 c. walnuts2 cloves garlic or 2 tsp. garlic powder1/4 tsp. salt1/4 tsp. pepper3/4 lb. cleaned, cooked shrimp (or 2 c. cubed, cooked chicken)
In food processor or blender puree olive oil, mayo, spinach, parmesan cheese, walnuts, garlic, salt and pepper until smooth. If necessary, add 1-2 tbs. milk or water to make a thick pouring consistency. Pour sauce over pasta; toss to coat. Top with shrimp or chicken.
