Tropical Cottage Cheese Pancakes

Ingredients
1/2 cup Cottage Cheese (I used Breakstones cottage cheese with pineapple)1 large Egg2 Tablespoons Whole Wheat Flour (I used Arrowhead Mills Multigrain Pancake Mix)
Directions
Blend ingredients in food processor. Spray pan with non-stick spray. Cook on low till bubbles appear, flip. Cook till done.

Serve with SF Maple Syrup - not included in calorie count (or plain!)

Makes 4 small pancakes (pictured) or 8 silver dollar size.
