SGT Sunny Fresh Fruit Tartlets

Ingredients
8 graham crackers 16 ounces16 ounces Daisy Brand 2% Cottage Cheese8 ounces reduced fat cream cheese3/8 cup sugar1/2 tsp lemon zest2 teaspoons fresh lemon juice1/4 teaspoon vanilla extract1 pound fresh fruit such as raspberries, blackberries, red grapes, blueberries; could aslo use strawberries2 tablespoons apricot jam
Directions
Crush graham cracker into crumbs and place them evenly in the bottom of 16 small ramekins to create shells.

Then, in a medium bowl, combine cottage cheese, cream cheese, sugar, lemon zest, lemon juice and vanilla extract; blend until smooth. Fill each shell about half way full with cream mixture. (The shells may be refrigerated for up to 8 hours at this point until use.)

When ready to serve, top shells with fruit. Microwave jam in a cup just until it liquefies, about 15 seconds: lightly brush over fruit. Yields 1 tart per serving.
