Taffy Apple Salad

Ingredients
1 Tbsp flour1/2 c sugar2 Tbsp cider vinegar1 egg yolk8 oz crushed pineapple, drained, reserve juice4 large apples, cored and diced with peel2 c unsalted peanuts16 oz cool whip free
Directions
In saucepan combine flour, sugar, vinegar, egg yolk, and juice. Cook over med heat til thickened. Remove from heat and chill.
In large bowl combine pineapple, apples, peanuts, and chilled cooked mixture. Fold in cool whip. Chill for at least 1 hr before serving.
