Ingredients
50 Grape Leaves2 C uncooked White Long Grain Rice2 lb Ground Beef, raw3 Bunches finely chopped Cilantro3 Bunches finely chopped Parsley3 Bunches finely chopped green onion1 Package frozen Lima Beans, 16 Oz. thawed1/4 C Plain Yoghurt1 1/4 tsp Salt 1/8 tsp Pepper 4 C water
Directions
Wash the grape leaves and soak in hot water while preparing the stuffing mixture. Rinse and soak rice in water 5 to 10 minutes. Drain the water off the rice and add the hamburger, finely chopped cilantro, parsley, green onion lima beans, and yogurt. Sprinkle the salt and pepper over the ingredients and mix thoroughly. Cover the bottom of a large pan with 1 or 2 layers of unstuffed grape leaves. Place a single leaf vein side up on a flat surface, remove the stem and place 1 to 3 tablespoon of the mixture in the middle of the leaf, the amount of mixture is dependent on the size of the leaf. Fold the leaf edges over the mixture so it is fully enclosed by the leaf. Layer the stuffed leaves fold side down in the pan close together, leaving room for the rice to expand. Pour the water over the stuffed leaves and place a plate on top so the top layer remains covered by water. Put the lid on the pan and cook over medium heat until the leaves are tender, approximately 1 1/2 hour.
